This recipe collection represents months of cooking the things I like best and includes using as much seafood as possible from our rivers and bay. However, My Favorite Things shows items I use consistently in my recipes that are available no matter where I am. I've also created a Vegetarian Keto page. The Recipes are found below. Hydration during Keto is essential, and drinking the following smoothie recipe helps your body maintain a balance. Hydration Smoothie Recipe: Blend together 1 cup spinach, kale or chard or a combination of these with 1/2 cup lemon juice, 1 tbsp. cider vinegar, 1/4 tsp. Himalayan salt, and 1/4 tsp. cream of tarter, Add 1 tablespoon CB MCT oil if you wish to curb hunger. You might want a simple keto water drink. If so, use the recipe in a full glass of water instead of blending with vegetables. Other hydration options are linked here.
DessertsKeto Brownies
1 cup almond flour 1/4 cup cocoa powder 1/2 tsp salt 1 tsp baking powder 1/3 cup melted butter or coconut oil 2 medium eggs 2/3 cup swerve 1 tsp vanilla **Mix together dry ingredients. Melt the butter/coconut oil. Add swerve and vanilla. Mix in dry ingredients. Spread pasty mixture into a 7x7 baking dish and bake for 15-19 minutes at 350. Cinnamon Bread
1 3/4 cup Almond Flour ½ cup of Natvia 1 tsp Baking Powder ½ cup Butter 3/4 cup cream 1 tsp vanilla extract 3 large Eggs 3 tsp of Cinnamon **Preheat your oven to 350F. Grease a 9x5in loaf pan and line with parchment paper. To a mixing bowl add almond flour, natvia, and baking powder. Mix well. Add butter, cream, vanilla e and eggs. Mix well. In a small bowl mix remaining natvia with the cinnamon. Spoon half the batter into loaf pan, and sprinkle with the cinnamon mixture. Add the remaining batter, Bake for 55 – 65 minutes, until done. Put on rack to cool. Serve with sauce if desired. Sweet Cream Sauce
1/4 cup natvia 1 large egg 1/2 cup cream 1/2 tsp vanilla **In a saucepan whisk together sugar, eggs, cream and vanilla. Cook the mixture over moderately high heat, whisking constantly, until it just comes to a simmer. Add flavor as desired. I like lemon. Keto Caramel Sauce
1 cup allulose 1/4 cup water 6 tablespoons butter 1 tsp vanilla 1 teaspoon sea salt 1/2 cup heavy cream **Whisk water and allulose over med heat to dissolve. Let sauce bubble and turn amber. Add butter and 1vanilla. Remove from heat. Add 1/2 to 1 teaspoon sea salt 1/2 cup heavy cream. Let cool Refrigerate 1 hour. |
PizzaPizza Crust
1 cups shredded mozzarella 2 tbsp. cream cheese 1 egg beaten 1/2 cup superfine almond four 1 1/2 tsp baking powder **Preheat oven to 400 degrees. In a bowl melt mozzarella cheese and cream cheese together in 20 minute increments, removing and stirring at each increment until thoroughly mixed. Add flour and egg to mixture. Begin mixing and finish using hand to knead together. Olive oil a pie plate. Using oil coated fingers, spread dough out on the pie plate so that it is even. Bake in oven at 400 degrees for 10 minutes. Cool. Add toppings of choice. I use a tomato sauce prepared as follows: 3 tbsp. tomato paste, 1/2 tsp. garlic powder, 1/2 tsp. oregano, Steps to creating the pizza topping--spread tomato mixture on baked crust, add desired ingredients to pizza--I like chopped olives, onions and sausage but you may use what you wish. Spread mozzarella cheese over the top and bake in 400 degree oven until cheese is melted, or about 10 minutes. Check often on progress. |
Breads and Misc.Mock Corn Bread
1 1/2 c almond flour 3/4 c heavy cream 1 egg 1 tsp baking powder 1/2 tap salt 2 tbsp olive oil Put mixture into a greased 9x9 baking dish and bake at 350 for 30 minutes. Keto Crackers
½ cup water to soak the chia seeds 4 tablespoon Chia Seeds 4 tablespoon Hemp Hearts ½ cup Almond Flour 2 tablespoon Olive Oil 1 pinch sea salt **Preheat oven to 275F. Soak 4 tbsp of chia seeds in ½ cup of water for 5 to 10 minutes. When it becomes a jelly consistency add remaining ingredients and mix well. Take dough and place in center of parchment paper. Put another sheet of parchment paper on top. Roll dough in between paper into rectangular shape. Remove top sheet and cut into cracker squares. Lay squares on cookie sheet and bake for 45 minutes. Remove from oven and flip each cracker. Return to oven for another 45 minutes until crispy., Sausage Bread
2 tablespoons butter 1 cup chopped onion 1/4 cup jalapeno 1 pound bulk pork sausage 2 cups almond flour ¼ tsp salt 1 tsps baking powder 1 cup shredded Cheddar cheese 2/3 cup cream 6 tablespoons melted butter 1 egg **Preheat oven to 375°F. Mix dry ingredients together and set aside. Cook sausage. Set aside. Sauté onion in sausage fat. When translucent add to sausage. Stir in dry ingredients and remaining ingredients in large bowl until just moistened. Pour batter into 13x9-inch baking dish sprayed with no stick cooking spray. Bake 20 to 25 minutes or until toothpick in center comes out clean and cornbread is brown on top. Mock Cornbread
2 Cups Almond Flour 2 tsp baking powder 2 tbsp coconut or olive oil 1/2 tsp salt 1 cup heavy cream 1 egg 1/2 cup melted butter or coconut oil **Preheat oven to 350. Mix dry ingredients together. Add wet ingredients and place in greased 9x9 baking dish. Bake for 30 minutes and check. If necessary, bake in ten-minute intervals until firm in center. Spicy Almond Bread
1 cup almond flour 1/2 cup sour cream 1 tsp. baking powder 1 egg 2 tbsp oil 1/2 cup shredded cheddar cheese 1/8 cup sliced jalapenos or chopped green chili **Mix ingredients together and spread in a pie plate. Bake at 350 for 30 minutes. Note: Vary recipe by adding black olives, bacon bits, etc. Breakfast Egg Muffins
Begin with making a base for muffins: 10 large eggs Salt and pepper to taste Mix well Add preferred ingredients. Examples include but are not limited to precooked sausage, chicken bits, onion, chopped onions, chopped spinach, jalapenos, cheddar cheese, cream cheese, bacon bits. Mix thoroughly. **Preheat oven to 400. Pour mixture in a non-stick muffin pan and bake for fifteen minutes or until done. Hollandaise Sauce
1/2 cup melted butter 3 egg yolks 1 tbsp. lemon juice Beat together egg yolks and lemon juice. Gradually add melted butter into yolk mixture, whisking constantly. Microwave on until sauce thickens using 10 second intervals, whisking at each one for a smooth sauce. Serve warm. |
